Unhinged History Lecture - CORN

Now is the time to info dump about Jimmy Red corn, which I stayed up reading about at 4 AM during an episode of insomnia. Apparently this variety of corn nearly went extinct when the last cultivator died in the early 2000s and they were down to only 2 ears of corn. Somehow it got saved, due to the heroic and inspiring actions of Ted Chewning, whose passion for vegetables and seeds led him to also save nearly extinct varieties of watermelon, beans, and fancy heirloom radishes. (Go Ted! )
The variety of red corn was celebrated especially during the Prohibition, when it was used for moonshine. People would go to the backdoor kitchens of the right people and buy food as a cover up for delicious moonshine whiskey that had a special smooth quality and honey-nut notes due to this sexy variety of corn. Apparently, it can also make some damn good grits that pair exceptionally well with brown butter. Thank you for coming to today’s hyperfixation rant!
